spiced cake


It's been a long time, but I finally decided to post the recipe for what we Dutch call 'peperkoek' or 'ontbijtkoek'. It's cake we eat for breakfast or lunch with a little bit of butter.

I saw the recipe for this cake and figured it would be the easiest recipe ever. I had some 'lebkuchen' spices leftover from these muffins, and I figured they would be great for ontbijtkoek. Spices like cinnamon, coriander, aniseed, nutmeg, and cardamon are perfect for spiced cake.

Spiced cake

Ingredients:
500g all-purpose flour
7g baking powder
1 tsp cinnamon*
4 tsp 'lebkuchen' spices*
500g brown sugar
500 ml semi-skimmed milk

* The original recipe asks for 2 tsp of cinnamon and 2 tsp of nutmeg. You can add another 2 tsp of other spices like the ones I mentioned above. 

Method:
Heat your oven to 170 degrees Celsius or 335 degrees Fahrenheit. Grease a cake tin with some melted butter. I also like to line the tin with a single piece of parchment paper in order to lift the cake out with ease.

Mix the flower with the baking powder and spices, set aside.

In a medium sized saucepan bring the milk with the sugar to boil while stirring regularly. Pour the boiling mixture into the dry mixture while stirring. Mix until all the flour is incorporated and you have an even batter.

Pour batter into cake tin and bake for an hour and a half. Let your cake cool before slicing it.

There it is a simple and no fuss Dutch spiced cake for breakfast. Don't expect it to have the same consistency as regular cake and don't forget to spread some butter on your slice of 'ontbijtkoek'.
